Daina is Kikunosato brewery’s brand. This brewery has been getting the gold prize of the National Bureau’s Research Institute of Brewing since 2015.
My home town is Tochigi prefecture. It is about 62 miles distant from Tokyo. There are eight landlocked prefectures in Japan. Tochigi is one of them.
I was born in Tochigi and I was raised there. In the summer, it is too hot! But in the winter, it is too cold. Making sake is in the winter. The cold environment is important to make tasty sake.
My husband love a brewery’s sake that is in Nasusiobara city. The city is located northen part of Tochigi. It is very cold during the winter…
This is Kikunosato brewery.
The lack of successors for every brewery is causing many headaches. About Kikunosato brewery, a son came back home and helped. Generally speaking, owners of breweries, called kuramoto, do not make sake. They run their breweries.
Who makes sake? Toji does. Toji means that chief brewer at a sake brewery. But recently, there are owners who take part in to brew sake. The young maste of Kikunosato brewery is that! These owners are called kuramoto-toji.

In Sep 2016- Feb 2017, Japan Air Lines selected Kikunosato brewer’s brand sake, Daina as a beverage of first class.
Daina is so sharp and dry. It helps get rid of an oily taste that remains in the mouth when eating meat dish. My husband enjoyed the raciness of the sake when we lived in Tochigi.
But we needed to move to Miyagi Prefecture because of his work, so we could not buy Daina… Like Kikunosato brewery, little breweries are not sold widely. Even though these are good sake!! Sake of little breweries are called local sake. It is difficult to buy them. Because they brew a few sake every year. So, these breweries provide most of sake to local liquor shops.
He were so disappointed… After saying goodbye Daina, more than ten years have already passed. Last year, at last he met Daina in Miyagi!!
A liquor shop handled Daina. Only the shop handled the sake!!!

Like wine, we drink sake during-meal-drinks. Even same brand, the taste is different from each other. That is caused by using rice, method of brewing sake. The world of Sake may appear to be simple but in fact it’s a deep practice.
