I often cook Chinese dishes. But, real Chinese ones are too hot for children to eat, like Mapo Tofu. So, I cook mild, but I use doubanjiang (hot bean pates)!!
There are many types quick Mapo Tofu’s food mix. I used them when I was a single. Most one’s food mix have 3 types. Sweeter, middle hot and hottest. But I think that even the hottest one is not hotter than real mapo tofu in China!
After I married, I cook the dish without a food mix. It means that I can adjust the spicy level.
These are ingredients. I missed soy sauce in this picture!, Sorry, soy sauce. Look at between tofu and tobanjyan bottle! Yellow tube is a ginger paste, pink is a garlic. I also use two paste tubes. They are so useful!!
Smell nice roasting! I added 1 teaspoon tobanjyan. It looked hotter, but its taste was not so hotter than real. My children ate this mapo tofu!
Cook ground pork well. The kitchen was filled with smell of a Chinese restaurant. Children also become happy every time when I cook this meal. It is not difficult to cook this dish, so I often select it for dinner when I have enough time.
Before cook tofu, boil it. There are three reasons. First, it gets rid of the excess water. Second, it helps helps to retain the shape better. Third, the seasoning is done more efficiently.
It looks mild mapo tofu! My children ate more than I did!
- 1 block tofu
- 1 clove ginger
- 1 clove garlic
- 6 oz ground prok (minched pork) about 170g
- 1 green onion
- 1/3 - 2/3 tsp tobanjyan (adjust the hot level) you like hotter, change 1 tsp
- 1 tbsp sesame oil
- １ tbsp miso
- 2 tbsp sake
- 1 1/2 tbsps sugar
- 1 1/2 tbsps soy sauce
- 2/3 cup water
- 1 tsp chicken broth powder
- 1 tbsp potato or corn starch
- 2 tbsp water
- 1 tbsp minced green onion
Mix all seasonings. Mince green onion, garlic and ginger. Cut a tofu into cubes, about 1 inch( 2.5cm). Boil water in a pot, then add the tofu. Boil it for one minute. After that, drain in a strainer.
Heat sesame oil in a fry pan on medium. Add minced garlic and ginger. Once they are fragrant, add tobanjyan and green onion. Stir them lightly. Then, put ground pork in the fry pan.
When the pork gets brown, add all seasonings. Turn down heat, mix them on medium to low. Once boil it, add the tofu gently. Turn off, then pour water-mixed starch evenly, stir. Heat them on high for one minute.
Put minced green onion, you like. Serve mapo tofu in a dish.
