My husband I visited Daiichi brewery Co.Ltd in 2006. The brewery is the oldest on in Tochigi, established in 1673. Kaika is one of brands. He bought a bottle Junmai Ginjyo sake Kaika shiboritate then. I did not ecpect me to be sake lover.
Today, sake is divided in six specific class name. The premium grade sake is decided by law. Furthermore, it can be classified into two categories, based on distilled alcohol added or not. The formaer is called non-jyunmai sake, and the later is jyunmai sake.
Non-junmai sake has three types sake that are Honjyo-syu (sake), Ginjyo-syu (sake) and Daiginjyo. These sake are made using rice, water, koji (malted rice) and a small amount of distilled alcohol.
The materials of Junmai-sake group are only rice, water and water. Generally speaking, non-junmai sake have much flavor of ginjo-ko than junmai one.
When I drink Junmai Ginjyo sake Kaika shiboritate, I was so surprised at that taste!!
I though that sake was not so cool before drinking it, but it was elegant and rich taste.

There are many breweries in Tochigi. Daiichi brewery is in Sano city where is located in southern-east. The excellent water is good for making sake. Yes, water is very important. It decides tasty of one!
