I sometimes cook okonomi-yaki, it is Japanese pancake contained cabbage.
Why I cook it? The reason is that the cook includes a lot of cabbage!

Most of okonomi-yaki are used meat, especially pork. But I want my children eat more vegetables so I made the recipe. It is so simple but the taste is good. We need powdered Dashi to cooke the dish too.
Dashi is very important for Japanese cuisines.
Western of Japan, Osaka city is famous as Okonomi-yaki town. There are many its shops. I hear that people in Osaka cook the dish very often. Theyl love cooking with flour. Okonomi-yaki is one of mosut popular dishes.
Look like pan cake! But the taste is not sweetly!!!

At last, Spread sauce over the okonomi-yaki and add mayonnaise if you like it. The most famous sauce for okonomi-yaki is Otafuku.
But I usually use Bull-Dog’s Worcestershire Sauce. I have used the sauce from my childhood.
About mayonnaise, I usualy select Kewpie Mayonnaise.
The sauce and the mayonnaise makes a perfect combination!!
- 1 cup flour (about125g)
- 1 egg
- 4 oz cabbage (about 110g)
- 1/2 cup water (120ml)
- 1 1/3 tsp powderd dashi
- add to taste Japanese worcester sauce
- add to taste mayonnaise
- green onion
Cut the cabbage into coarse strips.
Mix flour, stock and egg lightly. Next, add the cut cabbage and roughly mix the ingredients with a spoon.
Heat the oil in a frying pan, and turn down the heat to medium. Pour the mixture prepared in 2 onto the pan. Cook for 3-5 minutes. (put a lid as needed). Turn over the okonomi-yaki, and heat for a few minutes. Just like cook a pancake! Press the okonomi-yaki and if it is resilient, it's done!!
Serve with the topping.
