There are 25 sake breweries in Miyagi Prefecture. In this Prefecture, specific class name-sake accounts for about 80% of the total amount Miyagi’s sake.
In fact, the specific class name-sake accounts for 40% of the total amoun Japanese sake in 2016. All breweries in Miyagi are brewing high-level sake. On the other hand, they try brewing with eating sake.
Usually,they don’t use eating rice for making sake. But some breweries in this prefecture, brew sake eating rice like Sasanishiki, Manamusume.
This sake is Urakasumi Junmai-class (Saura Brewery co.ltd), it was brewed only water, rice and koji (malted-rice). The rice is Manamusume, We ate the rice before. We call the rice for making sake, syuzo-tekiseimai (literally, rice suitable for brewing sake).
The breweries there challenge to brew new sake and improvement in quality. We don’t drink all breweriesof Miyagi prefecture yet.
