There are two types tofu. One is Firm-tofu, and the other is Silk-tofu. The former is harder than Silk. So, we often select Firm-tofu to cook.
I love teriyaki sauce! Tofu and teriyaki sauce are friends!!!
I make teriyaki sauce by ourselves. We use soysauce, mirin, sake and sugar for making the sauce. Sake is rice wine. We use sake for cooking like wine.
Kikkoman Soy Sauce is the most popular one. I see the bottle for a long time!
When we cook Japanese, we use Mirin very often.
We use sake that is called sake for sake too. Mirin and cooking sake have different functions. The one makes food more richer taste. The other makes food richer and glaze them.
By the way, tofu is very useful! When I am busy, I cook tofu with various dishes. Wrap tofu with a paper towel and put a weight on it to drain well. Its time is the longest in this cooking!
After that, cut it bite-sized pieces and flour it with potato starch.

At last, pour teriyaki sauce into the pan. Please be careful! Teriyaki sauce is easily scorched!!

It is not hard to make Tofu teriyaki!!
- 1 block Firm Tofu
- 1.5 tbsp oli like olive one
- Proper amout of potato starch
- 2 tbsp Soy sauce
- 1 tbsp Brown sugar
- 1 tbsp Cooking sake (Japanese liquorl)
- 1 tbsp Mirin (sweet cooking sake)
- 5 sliced cucumbers
- Wrap tofu with a paper towel and put a weight on it to drain well.
Cut it bite-sized pieces and flour it with potato starch.
Fry them with 1.5 tablespoon oil. Cook on both side until nicely browned and then cook on low.
Pour teriyaki sauce into the pan and mix quickly and softly. Turn off.
